Cheesy Beet Rice

We use an Instant Pot to make the rice. 

1 cup of white rice

1 cup of chicken broth

1 chopped beet 

1/2 bell pepper (chopped)

1 cup of chopped zucchini



Add rinsed rice and broth in the inner pan. Then distribute chopped vegetables on rice evenly.

Put on the cooker's lid. Seal the vent. Select the “Rice” cooking program on its low pressure setting. When the cooking program ends, let the pressure release naturally for 10 minutes. 

Open the lid, stir and mix cooked rice and vegetables. Add shredded cheese into the rice mixture.

Served it with Littoes Plate.
